Paleo/ Primal Chocolate Pudding/ Mousse

I have been missing in action on here for some time now, but I have been playing and experimenting in the kitchen and have a few more easy fast recipes adapted from old favourites.
I have been craving (and giving into more than usual, OH the Horror!) Chocolate a lot over the last few months and have been looking for something that I can make when a craving hits and will most likely have the ingredients on hand.
This is what I came up with and is actually a great way of using up all the half eaten bananas that my 2 Year Old leaves around the house (that was starting to erk me) I'm sure I am not the first to come up with this but I thought I would share While its not exactly like Mousse or Pudding it really hits the spot for me when I'm craving something a bit naughty!

Here is what you are going to need;
Serves 1

1 Banana mashed smooth with a fork
1 Tbl Spoon Unsweetened Cocoa Powder
1 Tbl Spoon Coconut Oil (in liquid form)
Optional Add ins
Vanilla Essence, Almond Butter, Raisins, Coconut Flakes

Mash the banana as smooth as you can get it with a fork, the riper the banana the better!
If the Coconut is hard melt it in the microwave
Add this to the Banana mixture and continue beating trying to get all the little lumps out
(if you have a mini blender or magic bullet that would be perfect for this, alas I do not)
Add the Cocoa Powder mix until smooth, Don't worry if you can't get it perfectly smooth as the little banana pieces are a little like marshmallow thru it IMO
if you would like to add any of the extras add them in now
pop the pudding in the fridge to firm up a little as the coconut oil hardens again
And enjoy :)
