Gluten Free Ginger & Banana Bread



I have been busy trying lots of new recipes, playing around until I am happy with them, it has been fun changing around meals to suit our needs. Banana Bread took a while to get right, but it was worth the trial and tribulations along the way. Here's What you are going to need;

3 Ripe bananas Mashed
3 Free Range Eggs
1 Tbsp Real Vanilla Essence
1 Tbsp Honey
1/4 Cup Coconut Oil
2 Cups (compressed) Almond Meal
1/4 Tsp Salt
1 Tsp Baking Soda
1 Tsp Cinnamon
1/4 Cup Crystalized Ginger
Optional add in - Almond Slivers

Method
Pre Heat Oven to 175C/350F
As I was feeling really lazy I did all of this in the blender, by all means if you feel like doing this the old fashioned way do ;)
Add Bananas, Eggs, Vanilla, Honey and Oil to the blender pulsing to combine
Add in the Almond Meal, Salt, Cinnamon and Baking Soda a little at a time until combined
last but not least pulse in the ginger, depending how small you prefer the pieces dictates how long for.
Pour the Batter into a greased loaf tin (mines is 21x10cm) Add the Almond slivers on top, pat them down a little so they don't fly around the kitchen everywhere when you take them back out of the oven.....
Bake for 55-60 mins, mine was in closer to 60 mins and was a little darker than I would like, so keep an eye on it for the last few mins
I hope you enjoy this recipe, Banana Bread was something I quite missed since going Primal (over 6 months ago now, woo!) I Don't know why it took me so long to get around to this, but I'm glad I did.
