Grain Free Banana Choc Chip Muffins

Children seem to have weeks where they will eat nothing but bananas, so you stock up and then..BAM they won't touch a banana with a ten foot barge pole so the bananas go all spotty and black and get chucked in the bin,
As bananas cost the deficit of some small nations in Australia (not really it just seems that way!) this will just not do in our house. Black bananas are perfect for cooking with they are sweet and soft.
So mash them up mix in with some batter and you have yourself a beautiful healthy morning tea for the kids, who will suddenly love bananas again (Win for Mum!)

Here's what you will need

1/3 Cup Raw Honey
1/3 Cup Coconut Oil
6 Eggs
1/2 Cup Coconut flour Sifted (you can buy this at any health food store or at the Weigh 'n Pay )
1 Tsp Vanilla Essence
1 Tsp Cinnamon
1/4 Tsp All Spice
2-3 Ripe Bananas mashed
1/2 Cup Choc Chips (omit for a dairy free version)

Method

Preheat Oven to 175C/350F

Add Oil and Honey to a mixing bowl, pop in the microwave for a few seconds just long enough to melt the oil but not heat it or you will scramble the eggs when hey are added
Mix in the Coconut Flour, Eggs, Vanilla, Cinnamon and Allspice
When the mixture is smooth (this might require some elbow grease or a stick mixer as coconut flour tends to clump)
Stir thru the Mashed banana and Choc Chips
2/3 fill muffin cases and place in the oven for approx. 30 mins or until they spring back when pressed
