Raspberry & White Choc Muffins

OK, OK White Chocolate is not Paleo or Primal, but I had some in the cupboard and thought Id use it up and popped them in as an after thought, really the muffins didn't need them as they were lovely and moist and sweet from the raspberries, so feel free to omit or even add Dark chocolate or Carob chips instead? I never could get the taste for carob.....
Here is what you are going to need

Preheat Oven 150C
2.5 Cups Almond Meal
3 Eggs lightly whisked
1/4 Cup 100% REAL Maple Syrup (no sugar filled substitutes please!)
1/2 Tsp baking Powder
1/2 Tsp Salt
1 Tsp REAL Vanilla Essence
1 Cup Raspberries

In a bowl Add Almond Meal, eggs, Maple Syrup, Salt, Vanilla and Baking Powder
Stir until well combined
Keep the raspberries in the freezer until this point, measure them out and pop them back in the freezer until you are ready for them if need be
gently fold them thru the mixture and measure into muffin cups (3/4 fill each)
Bake for 30-40 mins or until they spring back when tested
