Lemon Sesame Chicken Drumsticks with Baked Thyme & Balsamic Mushrooms

This is a quick and easy meal that you can bundle into the oven and go on about your evening, the Drum sticks are sticky and sweet and will probably end up all over your face, my daughter enjoyed herself so much she went straight from the table into the bath :)



here's what you are going to need;

3-4 Chicken Drumsticks
1 Tsp Coconut Oil warmed so it is liquid
2 tbsp Lemon Juice
2 Tbsp Sesame Seeds
1/4 tsp Smoked Paprika

3-4 Mushroom cups
approx. 3 Tsp Balsamic vinegar
2 Tbsp Fresh Thyme

Preheat Oven 220C
Mix the Oil, Lemon Juice, sesame seeds and paprika in a bowl Toss the chicken thru coating completely
The longer you leave this to marinade the better over night is perfect, but as little as 15 Min's will be nice also
pop the chicken on a lined pan and into the oven for about 30-4- Min's or until the shin is nice and crispy and the chicken is cooked thru
Meanwhile place the mushroom cups face up and drizzle a little Balsamic over each and top with some thyme pop them in the oven when the chicken is in about 20 Min's
Serve up together with a side of steamed vegetables
Some Feta or Baked Ricotta would be beautiful crumbled on top of the mushrooms if you were that way inclined also
