Pea, Chilli and Coriander Soup


I had literally 10 minutes to make myself something for lunch today, but I also had a hankering for something lovely warm and hearty, so there was some quick rummaging thru the fridge and a little rustling in the freezer (or As Nigella calls it the frozen vegetable garden) and here's what I came up with

Ingredients
1/2 red onion Diced finely
1 Tsp Garlic and Ginger minced
1 Red chili Diced finely (seeds and membranes removed)
Salt & Pepper
4 Cups of Chicken stock (Use Vegetable to make it vegetarian friendly)
500g Bag Frozen Peas
1 Tsp minced Coriander

Method
in a large heavy based pot Saute the Onion, Chili, Garlic and Ginger in a little spray oil
Add the Sock and Bring to the boil
Add the Peas and replace the lid return to the boil
Remove the lid and boil quickly for 1-2 min or until the peas are just cooked, this way they will keep their nice bright colour
Remove from the heat,
Strain a lot of the broth off and pop the pea mixture into a blender
Add back as much or as little of the stock as you like until you reach your desired consistency
Stir in the Coriander and serve
