Chilli Con Carne

Oh my the weather has taken a turn towards the chilly lately on this side of the world, I am still enjoying it so far, getting rugged up and dusting off our coats and boots to wear is a almost a novelty, but I think my favorite part of winter is cooking up a big pot of something that's going to warm up the house and my tummy. We made a big pot of Chilli Con Carne the other night which did the trick nicely, here's what you are going to need

500g Lean Beef mince
1 Onion Diced
2 Tsp minced Garlic
2 Tsp Paprika (smokey or hot)
2 small Chilli's chopped (seeds and veins removed)
2 Tsp beef Stock Powder
2 Cups Water
400g Tinned Tomatoes
2 Tbsp Tomato Paste
1 Capsicum chopped
420g Kidney Beans
Brown Rice to serve

Add the Onion to a pan lightly sprayed with oil, cook until tender
Add the garlic and spices stir until fragrant
Add the beef stir to coat and brown a little
Add stock, water, Tomato's, paste and capsicum, simmer uncovered for about an hour or until the sauce has thickened
Stir in the kidney beans and heat through
Serve with Brown Rice
