Big Assed Cajun Chicken and Pumpkin Salad






I went shopping at the Spud Shed the other day, all the vegetables, fruit and meat all look so good and so much cheaper than Coles and Wollies so I tend to go a little crazy when I am there. This week there have been even bigger salads and veggie delights to make sure its all used up. This is one we had the other day everything was so fresh and crisp, yummy!
Heres what you will need;

Ingredients
1 Chicken Breast
Cajun Seasoning
200g Pumpkin
Ground Coriander
Mixed Lettuce
Fresh spinach
cucumber sliced
1/2 Acocado sliced
1 Tomato Diced
1 Spring Onion

Method
Spray the Chicken with a little oil and dust on the cajun seasoning pop in a griddle pan or on the BBQ or a fry pan, cook a few minutes on each side until cooked thru
Skin and dice up the pumpkin microwave for a minute or so (if you have time bake in the oven until crisped up a little on the outside) shake on a little ground coriander
Layer up the remaining ingredients and top with the pumpkin and chicken sliced up
And you are all done
