Asian Beef Stir Fry with 5 Spice Sweet Potato


Having a few good staples in your fridge and pantry means you can whip up some fantastic meals in no time, this meal won't take long and most of the ingredients will last in your fridge for a long time. After making the initial outlay for a few different jars you will have them on hand to use for so many different meals and will save you a fortune compared to the ready made sauces, but even better than that you will know exactly what went into your meals (you would be surprised at the added sugar and other nasties that have been slipped into them and you will have the proud moment of watching your family enjoy something you have made from scratch knowing it is not only tasty but healthy too I hope you enjoy this one, here's what you will need;

1 Tbsp Peanut oil
500g Stir Fry Beef
1 Red onion Diced
1 Zucchini
1 Green Capsicum
1 Head of Broccoli
1 Tsp Minced Ginger
1 Tsp Minced Garlic
1 Tbsp Minced lemon grass
1 1/2 Tbsp Soy Sauce
1 1/2 tbsp Sweet Chilli Sauce
1 Tbsp Lime Juice
1 Tbsp Minced Coriander

1 large Sweet Potato chopped into wedges
1/2 tsp 5 Spice
Spray Oil
You can't always have fresh herbs and Spices Avail these work great

Method
Chop the Sweet potato into wedges and spray lightly with oil dust lightly with the 5 Spice and bake in the oven 180C for about 30 Min's
While they are baking away in the oven
pop the Peanut oil in a wok and stir fry the beef and set aside
Add the Onion, lemongrass, garlic and ginger stir frying until the onion starts to soften
Add the Veggies and stir fry until tender
Add the Soy sauce, Sweet Chilli and Lime juice
Return the beef to the Wok and stir to combine
Serve with the sweet potato
