Teriyaki Salmon with Stir fry rice


Ingredients
4 Salmon Fillets (skin on, keeps the fish moist and together)
1/4 cup of Teriyaki Sauce
2 Cups of Veggies chopped (I used Capsicum, asparagus, mushrooms)
1 Onion
1 Tsp Garlic minced
1 Tsp Ginger minced
3 Cups of cook Brown Rice (1 Cup raw makes 3 cooked)
2 Tbsp Salt reduced Soy sauce
1 Tsp Sesame Oil

Method
Preheat oven to 200C
Place Salmon fillets on a plate covered with Teriyaki in the fridge for 10 mins
Brown both side of the fish in a pan with some oil. Approx. 2 mins each side)
Transfer Salmon to a Baking dish lined with Baking paper, cook for 4 mins for medium, or how you like it
While the salmon is baking add some oil saute the onion with ginger and garlic.
Add the rest of the vegetables stir fry until tender
Add the cooked rice to the pan stir to combine and heat thru.
Remove from the heat and add Soy sauce and Sesame Oil
