Stuffed Chicken Breasts

I made this for dinner last night, it turned out so great and was delicious! I'll post the ingredients for one, but just adjust to make how many you need to serve

1 Chicken breast
1 piece of marinated capsicum
2 Sun-dried Tomatoes chopped
3 or 4 cubes of marinated Feta Cheese
1 Tbsp Dijon Mustard
Dried Herbs

Preheat oven to 180C Cut a pocket into the breast of chicken.
Stuff with the Capsicum, Tomato and feta and seal with a toothpick
use a pastry brush to coat the stuffed breast with the Mustard and Roll in the Polenta and Dried Herbs
Place on a baking tray in the oven for about 25 min or until cooked thru
Serve with Veggies, I had Steamed Broccoli, Baked Pumpkin and Baked Cauliflower with lemon juice and zest. I chopped open the Chicken to give you a look inside at the filling
