Spicy Chicken and Haloumi Cous Cous
I've had a few requests for Cous Cous recipes lately. To get a little Blue Peter on you, Here's one I prepared earlier. Once you have cooked Cous Cous you will wonder why you didn't start earlier as its so easy and takes on the flavour of whatever you cook it with beautifully and is beyond easy to prepare.
1 Chicken breast diced
1 1/2 cups cous Cous
1 1/2 cups vegetable or chicken stock
1 400g Can of Chickpeas drained and rinsed
2 red chilli's chopped (take out the seeds ans vein)
4 spring onions chopped
zest of 1 lemon
1/4 cup lemon juice
1/4 cup olive oil
2 tsp smoky paprika
Put the Cous Cous in a large bowl with the stock and cover for a few minutes or until the stock is absorbed covered with a tea towel. fluff with a fork and leave to one side.
Chop the haloumi block into 3 lengthwise and pan fry on each side allow to cool and chop each section into about 12 disks. pop the diced chicken into a pan and brown. Add all the ingredients to the bowl with the Cous Cous. then whisk the dressing together in a bowl until well combined and pour over the Cous Cous mixture, stirring to combine, Season with pepper to taste
Cooking time 10-15 Minutes
