Cauliflower is one of my all time favorite vegetables, it has so many great uses and is quick to prepare. To make it into Rice all you need to do is grate and cook for a couple of minutes, much quicker than real rice and when mixed with whatever you serve it with almost indistinguishable as cauliflower.
This is a variation of this meal that has quickly become a favorite in our household, my mum made it last and sent me a picture (see above, There was no invite to join tho) here's how you do it;
1 Head Cauliflower (grated)
1 Clove of Garlic
1/2 Cup Shredded/ Desiccated Coconut
1/2 Cup Coconut Milk
1 Onion diced
Juice of 1 Lime
4 spring onions chopped
Heat the oil in a pan. Add Onion and garlic sauté. Add Coconut and cook until lightly browned
Add grated Cauliflower and Coconut Milk. Cover and cook for 7-10 Min's or until cauliflower reaches desired consistency. Stir in Lime juice and serve topped with chopped spring onion.
