Mexican Chicken Lasagne

Straight out of the oven

One of my favorite types of food is Mexican, but it can be quite fattening. This recipe is fast, healthy and tastes AMAZING

Ingredients
1 Chicken breast cooked and shredded (I poached mine, make the chicken so tender and juicy)
1 onion diced
1 400gm Can of Kidney Beans
1 400gm Can of reduced salt sweet corn
1 red chilli diced
1 400gm Can diced tomatoes
1 sachet of taco seasoning (or make your own its easy!)
a few mountain bread slices
1/2 cup of shredded lite cheese

Method
Add the onion to a pan with some oil saute for a few Min's,
Add the beans, corn, tomatoes, Chilli and tomatoes, bring to the boil and let the sauce thicken a little
cut one of the mountain bread to size and pop in a baking dish top with some sauce and chicken
layer like this until you have used it all topping off the last layer with some sauce and the grated cheese
bake in an oven for about 10 Min's or until the cheese starts to brown a little on the edges
can you smell the goodness?
